Lee, After installing Xubuntu and applying all the current updates, you can then use remastersys to create a Xubuntu Live CD with all the updates (and any other programs you have installed - but keep it all within the size limitations of a CD - you might have to remove some default programs). This is a command-line program in the repositories.
