I have tried both Xubuntu and the Linux Mint Xfce version. I like
Xubuntu better in general but I really like the single bar at the bottom
of Linux Mint Xfce (LMX). I have tried to copy the .config and .cache
files from LMX to Xubuntu but it does not work.

How can I make this change?

Thx reinier
The Panel Manager will then pop up, from which you can remove panels by clicking the "-" next to the panel name. You'll then probably will want to add the menu, logout button etc. to the bottom panel by right-clicking it and selecting "Add New Item".
