I also dislike how huge widgets are by default in GTK+3 (eg. Adwait and
most "flat" themes), but I believe Greybird has a pretty decent GTK+3
theme. For example, to me, xfce4-terminal with GTK+3 looks like it did
in GTK+2 (maybe I haven't noticed some changes). As for MenuLibre, it is
thankfully something you rarely have to look at, haha!
You may want to have a look at xfce-look.org, and see if you find a more
compact theme. That would be a lot easier than trying to modify them. A

Regarding the title bar, there is this module to disable client side
decorations, but it is something I have never ventured into:
