There is plenty of info out there to fully customize and restrict users.  My toughest was computer systems in a half-way house.  Half a dozen programs for job searching and locking down surfing to trusted only sites with a dns filter from OpenDNS.  Just so you know it can be done and the information is out there.

Also, if you set UID to < 1000 it will not appear in the available login list.  I used this to hide my admin accounts on client systems.  Use "Other..." option to login into the hidden accounts.  Students would only ever see "Guest"
