I installed Xfce, which comes with a program called xfce4-appfinder,
which does exactly what you want: It keeps filtering the remaining app
choices on the text you've typed in so far. In Xfce, I assigned it to
Ctrl+Shift+; , which is a remarkably easy combo to hit and return from.
In almost every window manager, there's a way to assign hotkeys to
random executables.
