Unity is very confusing (like win8)
xubuntu has nice clear menus,
as does its cousin
ubuntustudio which includes a lot more apps for sound and video editing,
depends how big and fast the computers are which one to install.

I didn't choose Lubuntu because there is no LTS release. 13.04 is great but will reach its EOL soon. 13.10 has many issues that I would avoid for a newcomer. I am confused between Ubuntu GNOME and Xubuntu. I think Xubuntu is a bit closer to Windows than Ubuntu GNOME. I am also thinking about Peppermint but we don't have an LTS version for Peppermint AFAIK.
Hope you could enlighten me with the best choice to convert two machines to Linux :D
Also, he said that his son needs Paint because of School. I told him there are lots of alternatives but he said Paint is better and he wanted Windows on one of the machines but I will do whatever I could to not install Windows :D I might need to look at Wine or a very close alternative to Paint. Any idea?

You could install as a dual boot, so there is a option to boot into Windows or Linux.
I would use Xubutu 12.04 for long term support.
