Hi Gary,

you can ensure that you're running the right version of Xubuntu by

$ cat /etc/issue

I can help you to customize /boot/grub/grub.cfg manually, to do it
please post the output of

$ ls -l /boot/vml*

After that I need additional information, but let's start here.

It's not common practise to edit grub.cfg directly. Linux Experts often
don't use GRUB, but other boot loaders instead. However, on this mailing
list might be an expert using GRUB, who can explain how to edit the
files, that are needed by the thingy, generating automatically a
grub.cfg, assumed you won't edit just one file, but several files ;)
that then generate this single file.
