Sorry to have to tell you, the new GDM behavior is hard coded in. There
will be some changes made to it, but I do not know if this will be one
of them. When GDM was re-written, it was written for the gnome desktop
environment exclusively. Some changes were made to allow Xubuntu to
boot using it.
However, you can type any user name, even though there is no selection
space to type in. When the GDM screen appears, just start typing the
user name. It will go to the user directly, and allow you to enter the
password as usual.
