To add the icon back:

Right click on the panel -> Add New Items...
In the search box search 'mix'
Click on 'Mixer'
Click the 'Add' button

That should bring up a 'Mixer Plugin' window which you can close.
Then by clicking on the sound icon you can configure your sound.
