Couldn't have said it better!
Almost all Gnome stuff is optional, so I personally remove some apps after
a Xubuntu install, but I'd recon that for a new Xubuntu user, the given set
of applications are OK.
Best would be that the default Gnome-loaded apps get stripped of their
dependencies, but that's subject to the amount of time Xubuntu devs are
willing to devote to that...
