We tought about that in dapper. In short:no.

It's one of those 'let's learn GTK and then disappear from the face of the planet
just as the app starts getting used and people start giving feedback'.

I filed a few reports and got good response while epdfview was active last spring.
And considered for dapper if Ubuntu devs were not agreeing with us having evince-gtk
built separtely. Which even if  a burden won out in the end, since it is better
to have one source package with two debs (evince and evince-gtk), than two different
upstreams to support in main.

So no, and 'no' to any other 3rd party GTk app proposal for gutsy at least.
