Help with customizing Xubuntu Live-CD and installer

Hello,
As my Google SoC project (Horde Live CD
http://code.google.com/soc/horde/about.html), I was looking around the Live
CDs available. I wonder how hard it is to customise the Xubuntu Live CD. Can
someone point me out the resources that document how the
Ubuntu/Kubuntu/Xubuntu Live CDs are built so that I can maybe modify the
Xubuntu Live CD for a Horde Live CD. The ability to customise list of
packages for Ubiquity would also be nice, so that one could use the Live CD
as an Install CD too.
