I'd suggest to stick to Thunderbird.
It's not heavy but for person like a mother (I mean, not
a computer expert) Thunderbird brings very nice features like
self-learning filter of spam messages, integration with Firefox,
well working spell checker, extensions, simply and intuitive UI, etc.

I'd say that everyone who knows Outlook Express will be able to find
herself with Thunderbird in a minute.
