Sorry for the delay of this reply.
What do you exactly mean that "Ubuntu-it menu can't be configured to English"?
Ubuntu-it Menu is an italian-specific firefox extension that is shipped with 2 locales: italian (it-IT) and english (en-US).

Firefox will automatically choose the correct locale.
Because you have:
LANG=en_US.UTF-8
you should see the english version.

Obviously some links are in italian also in the english version, such as
the Forum Board's names, etc... because they are untranslatable.
