I experienced a similar problem when updating from grub to grub2.

First, grub2 was chainloaded to grub legacy for testing. All was ok, Karmic and Windows 7 were both detected so I decided to use:
sudo update-from-grub-legacy

At my great surprise, Windows 7 no longer appeared in the menu. Only
Ubuntu Karmic and Memtest were there. This is misleading because grub2
successfuly managed to detect Windows 7 and add it to its menu when it
was chainloaded to grub lecacy.

Note: This happened yesterday and I was using up to date Karmic.
