I notice your logs are filled with EDID/DDC detection stuff.  Do you
notice that the printing of that into your Xorg.0.log correlates to when
the lags occur?  Can you watch that file and test various things to see
which application or activity triggers printing it into the log?

Aside from that, given that you're seeing it with so many different
versions and types of x packages, it sounds maybe like something lower
level like the kernel?
