update-grub is just a thin wrapper around grub-mkconfig, as is
documented in 'man update-grub'; you can use grub-mkconfig to write the
configuration file to some different place.

GRUB 1 was never really declared stable, and GRUB 2 is not yet entirely
ready for a 2.0 release, hence the version number. We're going with GRUB
2 a little early for various reasons.

First time Ubuntu users should not be installing Karmic right now, since
it's still in development. :-) However, since you are, could you please
attach /var/log/installer/syslog to this bug? That may give us a clue
about what went wrong with your installation.
