I have a very similar problem,
Open Office text descriptions on the tool bars and drop down menu's are absent. They do very briefly appear as you move the cursor over them, but all menu's are blank as well as the options settings box - if you can manage to get to it.
I'm running intrepid on a Toshiba Satellite 2410-601 with the nvidia accelerated graphics driver  (version 96) [recommended].
If I switch off compiz, open office is fine, turn it back on, text disappears again.
I've installed the 'fusion-icon' so I can easily switch between compiz and metacity.
