Daniel, I'm not sure if it's your job to explain this
but I don't know who else to ask.

mysql-server depends on mailx
mailx depends on postfix

what's mailx?
why isn't mysql-server happy with my default sendmail
installation?
does ubuntu not have a default sendmail installation?
why does mysql need to send mail? I've had many mysql
installations on other OS that didn't have a
configured mta.
does the pipe in the mailx Depends denote alternative,
ie if i had an mta installed, it wouldn't have
installed postfix?
