I'd agree with the notion that one color is a bad idea. Some people like brown, some don't. Why not: white with Ubuntu logo, no text white with Ubuntu logo, Ubuntu text black with above brown with above what about polos? I'd love a black polo with the logo. There could be others with a large version of the logo on the back of the t-shirt. The possiblities aren't limitless, but they aren't really restricted either... I think they would sell. Order small batches and don't offer something new until they sell out, things like that.
