Just out of curiosity about this new-to-me thing, I looked them up.
One of the interesting differences between symlinks and bind-mounts
is that the symlink source exists in one location and the bind-mount
source exists in two locations. Not that that does anything to
explain why some of your bind-mounts are found by locate and others
aren't, so it's good that you found a work-around.
