More practical in that case is to gain physical access to the server and hook up
the additional hardware to it (display, keyboard, mouse) as well as bringing a
desk to put everything on.
Then I should be able to choose the right server to start (if there are
alternatives).

Maybe my new idea to reformat the desktop partition and make it a data drive
instead, then perform a sudo update-grub on the server system to basically
create a new boot menu where the desktop ubuntu would no longer exist can work?

The problem then is that I don't know how to force the reboot on the server to
actually bring it back up again.

Maybe Windows starts running for example, or GParted standalone....

I have not yet reformatted the partition for the Desktop.
