I suggest:
1) Yes, get the AMD CPU.
2) Never, ever overwrite the native Windows installation. It's handy
for BIOS and other updates HP might issue, and they do not support
Linux updates of such AFAIK. Use the Windows Disk Management to shrink
the Windows partition to something small but enough to run, and use
the rest of the disk for Ubuntu.
I did this with my LG laptop 3 year ago and it functions just fine
(with Xubuntu, my fave :-). It actually runs circles around my
desktop, which is a bigger, way more powerful machine, but it also has
20x the storage and all the irrelevant peripherals as well. I only
wish the AMD CPU options had been available then (I don't care for
Intel or their CPUs).
