what is the difference between "cat" and "minicom" for dumping a tty outpu?

I got the ADC card shown here,

thinking I could get the output with "cat /dev/ttyUSB0"
but that only gave binary junk. I avoided using minicom assuming
it would do the same but in fact "minicom -D /dev/ttyUSB0"
dumps ADC samples as expected. I'm digging through to source
code for minicom but does anyone know offhand wth the difference
is? I'm using "cat" for an arundino sample program and
that works just fine.
