Irritating notification counts

You may be able to turn them off by going to 
Settings->Appearance->Configure Dock Behavior. If there's no setting 
available there, you can either use the gui dconf-editor or command-line 
utility, gsettings, to change the dconf settings.

$ gsettings set org.gnome.shell.extensions.dash-to-dock 
show-icons-notifications-counter false

I'm using 22.04.3 which doesn't have this setting, but it occurs to me 
that there might be a setting for the counts in 
Settings->Notifications->click application (Thunderbird for instance) 
and see if there's a slider toggle for it per-application.
