Would a ffmpeg snap work for you?
I found a guide here;

Snaps are usually self-contained and shouldn't mess up your 18.04-
installation. Backup first if you chose this route.
I do not know what ffmpeg version is currently snappified on the url above,
but it might give you a starting point for further research maybe.
And yes, yes, I know snaps are so bad etc. ;-)
