It sounds like you are a first-time user. If so, then ClawsMail,
Thunderbird and Evolution are some of the more popular email clients.

I do not know how much they allow you to modify envelope data like
From: and Reply-To:. I suspect they all do, and it's just a matter of
"how difficult".
