it doesn't matter, the data gets collected for misuse and nothing else.
That we are using Linux does hide privacy policies of apps such as Zoom
a little bit. It's less hidden, if you take a look at an app store of a
proprietary OS.

This is not the kind of app I'm using, unless an employee does force me
to do so.
This is what the app privacy of apps I pay for, that I'm using, usually
does look like e.g.:

For a few apps I'm using the app privacy is not that perfect, but not as
bad as for Zoom. Take into account that it's not only the app's privacy
policy that is an issue. If I'm in a Zoom meeting or webinar and the
person who invited to the meeting or webinar doesn't pay for "rooms" or
is to stupid to handle this "rooms" feature or what ever it's called to
form working groups within a meeting, but instead we need to exchange
telephone numbers to work in groups by telephone, then I have to give my
number to some persons who are also taking part in the meeting or
webinar, but whom I don't know. Those persons could also misuse my
telephone number. I have not given my phone number to a women from
India, she got my number from somewhere else.
The only correct way for meetings and webinars are systems run by the
employee or webinar organiser, assuming experts are maintaining it. This
is theoretically possible by e.g. using free software, but definitively
impossible when using a third party service such as Zoom, especially if
a free as in beer approach is used (don't pay with money, but with your
data).
Remember, if you sell your soul to the devil you get something like
becoming the best guitarist on earth for the next 50 years. If you sell
your soul to Zoom and Co you get a few hours video conference with
broken audio and video. A deal with the devil is better than a deal with
Zoom and Co..
