That is very odd.

I intentionally picked the Australian version for you, too. (The
selector is very small, right at the bottom of the page.)

I thought of something else. Recent versions of Ubuntu have disabled
the detection of other OSes.

You may need to install the `os-prober` package:

sudo apt install os-prober

... And enable it, which is described here:

That alone might result in Windows suddenly reappearing in your GRUB
menu after you run

sudo update-grub
