lubuntu (Lightweight Ubuntu) would be the way to go. https://lubuntu.me/ as
others have pointed out...

But if you want something that can run on even older and smaller hardware,
and are not afraid of leaving Ubuntu, then check out Raspberry Pi Desktop :
https://www.raspberrypi.com/software/raspberry-pi-desktop/ which has an
even smaller footprint.
