PS:

IIUC Waterfox has got an update option. Did you try to update by
Waterfox's auto-update option?

This is disabled by the script to build an Arch Linux package:

   // Automatic installation of updates won't work on root, so disable this
   pref("app.update.auto", false);

Either update by building an Ubuntu package or by just unpacking the
archive in /opt and link against the executable.
