How do I 'do-release-upgrade' now 21.10 is (just) out of support?

Well not *quite* 'very smoothly', one slight problem with the apache2
php module, the apache configuration hadn't changed to php8.1 but the
php8.1 library was installed.  I just disabled (a2dismod) php8.0 and
enabled (a2enmod) php8.1 and apache2 is now working.
