If there is free space behind the /boot partition, just resize the
partition.
If there is free space before the /boot partition, resize the partition
and reinstall grub2.
IIRC only moving the partition or enlarging the partition at the
starting position requires to reinstall grub2. IIRC if you enlarge the
partition at the end position, without changing the starting position,
it doesn't break grub2.

Neither do I use grub2 anymore, nor have I ever installed any
bootloader to a gpt disk, all my bootable installs were or are on mbr
disks.
