As others have asked: why do you want to change from Evolution?
I've never used maildir AFAIK, and a quick look around shows that it
seems to be slow for large collections of mail. I use Claws and its
documentation says that it uses MH specifically because of that. There
is a plugin to import maildir, but apparently it is not maintained. The
best place to ask about possibilities would be the claws users mailing
list.
Wikipedia has a list of MUAs that support maildir and also various
other components of the mail toolchain. It might be possible to use
one of them to read the maildir and feed it to claws to store as MH,
for example.
But equally for a one-off transition from maildir to MH it seems it
might be fairly easy to write a simple program to do the conversion. No
need to handle new or tmp directories etc.
