I can't understand this.  Are you sure you're using the right boot
option?  The single-user mode should drop you into the shell.

Have you tried just hitting Enter or using ^C (CTRL-D) when asked for a
password?

That won't work on Ubuntu systems, unless the OP has set a root
password.  By default on Ubuntu the root password is invalid and the
only way to be root is by using sudo: you can't log in directly as root
via a login prompt or su.
