That's different. You started the process.

Merely killing it doesn't undo the changes. It stops downloading
packages, but the repositories have been changed. The next time you
update, it updates from the new repos and you get the new version.
Probably badly, because the official tool does other things.

In the early days,  the Ubuntu docs told us _not_ to use the old
Debian method of "change sources.list and do apt-get dist-upgrade"
