I think the hardware I am running the server on is OK for that, after all it is
a decent Lenovo PC which came with 16GB RAM and 500GB SSD (and with Windows10).
OTOH, once it is done I will also install TigerVnc because I will access it over
the network using RealVNC and then I assume that the hardware does not matter.

I found another how-to which lists 8 different environments than my initial
find:

But it does not list Lubuntu...

I also found one dealing specifically with Lubuntu on top of Desktop 20.04, but
that is not where I am starting since I do not have the Ubuntu desktop installed
on the server...

OK, that is probably wise and I can do that on my Windows10 PC where I have
VMWare WorkStation Pro installed.

To do:
1- Create a 20.04 server (no desktop) in a VM
2- Make a snapshot of the running server in VMWare Workstation
3- Install the desktop to the server
4- Check it out
5- If not OK go back to the snapshot in step 4 and start over
