If you install virt-manager you'll get an OK GUI interface kinda-sorta
similar to VMWare that will let you create, manage, and delete virtual
machines using KVM/QEMU.
If you're familiar with how it's done in VMWare you'll likely not have
too much trouble with this.
The only trick is that you'll have to add yourself to a POSIX group
(and log out and back in) to avoid permissions errors. I believe there
are docs on the web covering this else let us know.
RE: Gnome: agreed please choose for yourself. There are a lot of vocal
people on this list who trash Gnome whenever the subject arises but
there are also a lot of us who think modern Gnome works well.
There are two important things to know about Gnome these days: first,
you can get access to a lot of customization by installing the Tweak
Tool application. Second, Gnome provides a large Extensions ecosystem
which lets you customize the experience in many ways. So rather than
something like KDE where all the knobs and dials are part of the base
system, with Gnome you install extensions to customize things.
