Ubuntu 20.04 sudden crash while processing, how to know why?

I have started a conversion again now and what happens is that the fan starts
running full speed almost immediately after I start the job.
And after less than a minute the notebook shuts off!
Seems like an overheating problem...
I have used my Windows10 computer earlier to do the conversions (in a batch job)
using the same ffmpeg command. I have noticed that when I do that the Win10 PC
uses a LOT of CPU cycles, Task Manager shows upwards of 80% CPU when the convert
runs.
Is there a way in Ubuntu to limit CPU usage for a command like ffmpeg which uses
up a lot of CPU, possibly overheating the whole system?
