Oh, sorry! I totally missed that. My bad and my apologies.

OK, so it's not that then.

(I had to upgrade Ventoy recently just in order to install Mint. I got
GRUB errors on my previous version, which had worked on everything
else I tried.)

Aha!

So, there's a fair bit of info on his site:

abovementioned Ventory stick to install Bunsenlabs. It didn't work. I
ended up at the UEFI command prompt.

So, it's not Ventoy.

I would compare the Mr Chromebox version on his site with your
version. I fear reinstalling it might require reinstalling ChromeOS
though.

And there are some hints.

E.g. on some machines you need to add `nomodeset` to the GRUB
parameters, while installing, by typing it after the double dash in
the GRUB parameters -- IIRC, before the double dash is temporary and
is discarded, but after it is kept.

# - The '--' option (double-dash) tells debian-installer that every option
# that comes *after* the double-dash should be appended to the kernel
# boot line for the installed system, in addition to being used for the
# installation. Use this to provide boot options that need to stick after
# the installation. Options to define a console over serial should be
# placed here.
