How do you make Libreoffice 7 menus READABLE?

Hello all,
I recently installed Ubuntu 21.04, which includes Libreoffice 7. It works, except the toolbar (File, Edit, View, Insert etc...) and all its drop-down menus are almost unreadable, because somebody (not in Ubuntu, I assume) thought that grey characters over a black background are a good idea.
How this, instead of the opposite, could ever be set as default is beyond me, really. It really seems the OPPOSITE of usability to me.
But hey, who cares, surely there is a way to revert that interface to a real color scheme. Except I can't recognize it. I searched and found instructions to change the icons, or to set dark even the background of the page being written. But the menus themselves remain unreadable.
Surely it's my fault for not using the right keywords, but I need help here. I want all the whole darned Libreoffice windows, toolbars and all, to be light grey background, with menus written in black. How do I get there?
