This was a bit more helpful. I was able to make progress with gnome
tweaks. I changed the Icons (not the Cursor) to yaru and the cursor
icon changed to a solid black icon with the finger pointing up
(instead of a transparent icon with a black outline.) Then I switched
it back to Humanity and the desired icon is still there.
