I've already found out how to do it: Boot the installation USB-stick in
UEFI-mode. There should be a corresponding entry in the boot menu. Then
the installer makes it UEFI. (See thread "Installer makes broken GPT
partition table").

It turned out, I don't have to.

The installer does that.

I do want to have full system encryption. And this entails LVM, when
using the Ubuntu installer. And it can be done. It actually was very
easy until I got into touch with UEFI.

Trying won't hurt in this case. If it doesn't work, I can still start
over.
