Ubuntu Server 19.10 on Intel NUC install error

I have a five-year-old NUC, which finally gave up the ghost, and I gotta
say: WHAT A PITA.  I have installed Linux, especially Debian variants,
something well north of 1000 times in my 25+ years of use, and almost
never have I had the problems I had with the NUC: wouldn't recognize
specific SSD drives, the BIOS was wonky, boot order was wonky... the
list goes on and on.  It's funny -- I mean, Intel should be something
like The Standard, and they certainly support Linux, but the NUC -- at
least the one I had -- was easily one of the hardest systems I've ever
had to deal with vis-a-vis Linux.  So I offer no particular insights to
your problem, but you certainly have my sympathies.  Perhaps try going
for legacy boot instead of UEFI?  (Or vice-versa.)  Likewise, be sure no
USB disk devices are left in during install.   And cross your fingers.
