running bionic beaver from USB stick sometimes crashes requiring I pull the stick before rebooting.

1) My instincts tell me 750M of RAM is not enough for what you are using
and doing. After some research I found this:-

If I had to use an Ubuntu on a system with 750M of RAM (assuming that a
memory upgrade is not feasible), I would install lubuntu
https://lubuntu.me/downloads/
2) I just use the installer as provided by the Ubuntu install. Nothing
fancy and it just work,
