To format Disk for ZFS or not ?

If you want to go zfs, then do it now. Are you planning a mirror?

There may be other ways of doing it but to create my raidz2 arrays, I 
add blank drives that are set with GPT partition types to the raid, and 
then "Create the desired hierarchy."
