You can unlock the Amazon icon from the launcher, then (in system
settings under privacy) turn off "include online search results".

According to my notes from long ago, this gets rid of all the shopping
and webapp stuff (not just Amazon):

   sudo apt-get remove unity-lens-shopping
   sudo apt-get remove unity-webapps-common

Use with care.

My system doesn't search on-line, but if I type "amazon" into the dash,
I still see the webapp. Since it will not run unless I tell it to, I'm
content with that.
