I install 16.4 server on headless boxes/guests with the choice of samba 
and openssh, and lamp if i need mysql.

Then a minimal mate desktop with gparted and other goodies. And x2goserver.

You can log in, leave programs running on the desktop, and then 
disconnect so you can get back to whatever.

They run 24/7 with occasional reboots to apply updates.

I love this os.  :)
