It's really easy in Gmail.

See the three dots at the bottom of the compose window? That's the
quoted text. Press Ctrl-A to select all. That expands it. Now, cursor
past it, trim any extraneous cruft like signatures, and put your reply
_there_. Simple. It's what I just did.

There's a Labs setting to make it easier, too.
