erm ... your inital bug was that you could not scan on mint *natively*
installed on a machine but could scan from your ubuntu server also
*natively* installed on hardware. now you see an error inside a VM
install, this is definitely not comparable. 

if you want something comparable, run the ubuntu-mate livecd session on
the machine that has mate installed and try if ubuntu-mate behaves any
different when run natively on the same hardware. bringing a
virtualization layer into the game will definitely not make things
better/easier :)
